Snacking With Diabetes: Reading Carbs, Fibre and Net Impact
How to evaluate a snack's carbohydrate load and likely glucose impact. General information — your care team's guidance comes first.

An important framing note before anything else.
Diabetes management is individual to a degree that makes general advice genuinely limited. Type 1 and type 2 behave differently. Medications — insulin, metformin, GLP-1 agonists, SGLT2 inhibitors — each change the picture. Individual glucose responses to identical foods vary substantially between people, which large continuous-glucose-monitoring studies have demonstrated repeatedly.
So this is a post about how to read a label, not what to eat. Your physician, endocrinologist, diabetes educator or registered dietitian knows your situation; a blog doesn't. If anything here conflicts with their guidance, follow theirs.
Reading the carbohydrate section properly
On a Canadian nutrition panel, the carbohydrate block has three lines and their relationship confuses people.
Total carbohydrate is the umbrella figure. It includes fibre and sugars — they're indented beneath it as components, not additions.
Fibre is largely not digested or absorbed in the small intestine, so it contributes little to blood glucose. Some fermentable fibres yield a small amount of energy through colonic fermentation.
Sugars covers both naturally occurring and added. Newer panels break out "Includes X g Added Sugars," which is the more informative line.
For our Protein Popped Chips, a 38 g bag reads: total carbohydrate 16 g, fibre 3 g, sugars 0 g. So roughly 13 g of digestible starch.
The 'net carbs' question
Net carbohydrate — total minus fibre, sometimes minus sugar alcohols — is a widely used concept and it's worth understanding its status.
It isn't a regulated term in Canada. There's no legal definition and no requirement to calculate it a particular way.
The reasoning behind it is sound for fibre. Fibre genuinely doesn't raise glucose the way starch does, so subtracting it gives a closer estimate of glycaemic load than total carbohydrate alone.
It gets abused with sugar alcohols. Maltitol, in particular, does raise blood glucose meaningfully despite often being subtracted in net-carb marketing. Erythritol has minimal glycaemic effect; others fall in between.
Canadian diabetes education generally teaches counting available carbohydrate — total minus fibre — for carbohydrate counting purposes. If you count carbohydrate for insulin dosing, use whatever method your care team taught you, and confirm it with them rather than a label's marketing claim.
Why glycaemic index is a weak tool for snacks
Glycaemic index ranks foods by their glucose response relative to a reference, and it's more limited in practice than it appears.
It's measured on 50 g of available carbohydrate, which for many foods is an unrealistic portion. Glycaemic load — GI adjusted for actual serving size — is more useful.
It's measured on foods eaten alone. Almost nobody eats a snack in isolation, and adding protein, fat or fibre substantially changes the response.
Individual variation is large. The PREDICT studies found that different people show markedly different glucose responses to the same standardised meal, driven by factors including gut microbiome composition, meal timing and sleep. Population averages tell you less about your own response than a glucose meter does.
Which points at the practical answer: if you have a meter or a CGM, test the specific foods you eat regularly. That data beats any published index.
What generally moderates a glucose response
Reasonably well supported across the literature:
- Protein and fat alongside carbohydrate — both slow gastric emptying, flattening the curve. Fat can also delay the peak, which matters for insulin timing.
- Fibre, particularly soluble — forms a viscous gel that slows both emptying and absorption.
- Food form and processing — intact whole grains produce a lower response than finely milled flour from the same grain.
- Walking after eating — modest post-meal activity meaningfully reduces the glucose excursion. One of the better-supported non-dietary interventions available.
How to evaluate any snack, in four checks
- Available carbohydrate per serving. Total minus fibre, and confirm the serving size is what you'll actually eat.
- Added sugars. In a savoury snack this should be 0 g.
- Protein and fibre present? Both moderate the response. A snack with neither is a bare carbohydrate load.
- Sodium. Relevant because hypertension frequently accompanies type 2 diabetes, and cardiovascular risk management is part of the picture. Ours is 200 mg, 9% of the daily value — moderate, and we don't qualify for a low-sodium claim. Detail in low-sodium snacking.
Where our chips land, factually
Per 38 g bag: 150 calories, 16 g total carbohydrate, 3 g fibre, 0 g sugars, 12 g protein, 4 g fat, 200 mg sodium. Available carbohydrate around 13 g.
What we won't do is tell you that makes it a diabetes-friendly snack. That's a claim about your physiology, not our product, and the number that matters is what your own meter says. Thirteen grams of available carbohydrate with 12 g of protein alongside is a reasonably favourable ratio — whether it suits your management plan is a conversation with your care team.
If you've been newly diagnosed, Diabetes Canada and a referral to a registered dietitian or certified diabetes educator are the right starting points. That's a better use of your time than reading brand blogs, ours included.
